Bison versus beef is an interesting comparison, as both meats offer unique flavors and nutritional benefits. Bison is leaner has a slightly sweeter taste, while beef is more widely available and tends to be richer in fat. When cooking bison, it's best to use lower temperatures and shorter cooking times to preserve its tenderness.
