Quarter Beef
2 garlic cloves, minced or ¼ tsp ground garlic, or as desired or optional In a bowl, mix all ingredients. Pour ½ into a resealable plastic bag; add meat and seafood, and the other half for the veggies. Marinate 1-2 hours. Veggies:Green pepper, Onion, Squash, Zucchini, Mushrooms, Tomatoes or your choice Skewer veggies separate from meat. Place on grill 6-8 minutes before adding meat skewers. Place seafood on separate skewers and add to grill a few minutes after meat 2 lb. cubed Texas Longhorn Sirloin tip steak*1 cup red wine (I like a good bottle of cabernet to sip with the meal)2 cans Campbell’s beef consomme’ (10.5 oz.)1 tsp. salt½ pepper1 medium onion (1 cup diced frozen onions)5 Tbsp. of flour2 tsp. Herbs De Provence ( or basil, parsley, rosemary, and any other herb you like)Combine all ingredients and mix well. (use a whisk to incorporate flour)Cover casserole. Bake for 300 degrees for 2 hour. Reduce to 275 degrees for 45 min. to 1. Or until meat is tend and nice gravy has formed. Serve with noodles** or mashed potatoes. Will serve 4 people, or one very hungry rancher & his wife!*A couple packages of round (sirloin) tip steaks come in a quarter beef. This works very well. Remove any fat (there’s very little) and cut into cubes.** I use about ½ package of egg noodles 1 boneless chuck roast, trimmed, seasoned with salt & pepper (3-4lb.) Heat oil in sauté pan over medium – high heat. Sear on all sides, 10 minutes total. Transfer roast to 4 – 6 qt. slow cooker. Stir flour into sauté pan; cook 1 minute. Add tomato paste; cook 1 minute more. Deglaze pan with wine, cooking until liquid evaporates. Stir in broth and Worcestershire sauce; bring to a simmer, scraping up any brown bits. Transfer broth mixture to the slow cooker; add onions, carrots, celery, garlic, thyme and bay leaves. cover and cook until meat is fork tender. *If roast is larger than 3-4 lb., additional broth will be needed to cover the roast and vegetables. Time will also need to be adjusted. 1/2 tsp. each of rosemary, basil, thyme, majoram or 1tsp. herbs de provence (or any herbs you like) Brown burger with onions, salt & pepper pour off grease. Add to pot with tomatoes, beans, sauce, chili powder, herbs.
